How to Prepare
"Crawfish Au Gratin"
In a heavy sauce pan, melt the butter over medium-high heat.
Add diced onions, bell pepper, celery and garlic to the butter. Reduce heat to medium and saute until wilted (do not brown vegetables), which will take about 5 minutes.
Add the crawfish to the mixture and continue to saute for an additional 5 minutes.
Sprinkle the flour into the mixture and blend well.
Add the whipping cream to the mixture and stir constantly until you achieve a thick, creamy sauce.
Reduce the heat to medium-low and allow sauce to simmer.
Add the white wine, lemon juice and Cajun seasoning to the sauce.
Sprinkle in 1/2 of the cheddar cheese, stirring constantly.
If needed, add salt, pepper or additional Cajun seasoning to taste.
Add the green onions and parsley to the sauce.
Note: If the sauce is too thick, add a little hot water to thin.
Place equal amounts of crawfish sauce in each of 6 Au Gratin dishes.
Sprinkle the remaining cheddar cheese equally on top of the crawfish sauce.
Preheat the oven to 375°. Bake the Crawfish Au Gratin for 15 minutes or until the cheddar cheese begins to bubble.
Serve with a salad and garlic bread. A glass of wine is optional.
