How to Prepare
"Crawfish Jambalaya"
Mix flour and oil together in a heavy pot and make a medium-dark roux.
Add the diced onions to the roux and cook until the onions are translucent.
Add the water to the roux and bring to a boil.
Reduce heat to medium-low and simmer for 30 minutes, stirring occasionally.
Add green onions, bell pepper, parsley and Cajun seasoning. Cook for an additional 30 minutes.
Note: Mixture should have the approximate consistency of soup before the rice is added. If the mixture appears too thick, thin with hot water to the desired consistency.
Add crawfish and rice. Cook for 25-30 minutes, or until the rice is cooked.
Note: 15 minutes after adding the crawfish and rice, check for adequate seasoning. Add Cajun seasoning to taste, if needed. Stir thoroughly after adding the seasoning.
When the rice is cooked, remove the Crawfish Jambalaya from the heat and serve.
