How to Prepare
"Crawfish Stew"
Mix flour and oil together in a 5 qt. pot and make a dark-brown roux.
Add diced onions to roux and continue to stir until onions are translucent.
Add 1 cup of water to roux and mix thoroughly.
Continue to add water (a little at a time) until the desired consistency is achieved.
Reduce heat to medium-low and add bell pepper. Simmer for 15 minutes.
Add salt, Cajun seasoning, green onions and parsley. Mix and cook for 15 minutes.
Add crawfish and cook for no longer than 15 minutes.
Note: If the Crawfish Stew is too thick, simply add a little water to achieve the desired consistency.
Add Cajun seasoning to taste, if needed.
Serve the Crawfish Stew over cooked rice. Serves 6.
