How to Prepare
Melt the butter over medium-low heat and then add onions and cook until translucent.
Add the green onions and parsley and continue to cook on medium for 5 minutes.
Add cream of mushroom soup and mix well and then add the crawfish.
If mixture gets too thick, add a small amount of water to thin sauce.
Add salt and red pepper. Mix well.
If you want the Crawfish Etouffee to be very spicy, do not add salt.
Add Cajun seasoning to taste.
Simmer for approximately 15 minutes.
Serve Crawfish Etouffee over cooked rice.
