"Crawfish Jambalaya"

5 Qt. Pot

  • Mix flour and oil together in a heavy pot and make a medium-dark roux.

  • Add the diced onions to the roux and cook until the onions are translucent.

  • Add the water to the roux and bring to a boil.

  • Reduce heat to medium-low and simmer for 30 minutes, stirring occasionally.

  • Add green onions, bell pepper, parsley and Cajun seasoning. Cook for an additional 30 minutes.

    Note: Mixture should have the approximate consistency of soup before the rice is added. If the mixture appears too thick, thin with hot water to the desired consistency.

  • Add crawfish and rice. Cook for 25-30 minutes, or until the rice is cooked.

    Note: 15 minutes after adding the crawfish and rice, check for adequate seasoning. Add Cajun seasoning to taste, if needed. Stir thoroughly after adding the seasoning.

  • When the rice is cooked, remove the Crawfish Jambalaya from the heat and serve.
