How to Prepare
Put crawfish, onion and parsley in a food processor.
Note: Pulse food processor until the pieces of crawfish are approximately 1/4" in size.
In a large bowl, mix flour, Cajun seasoning and egg.
Shape into 2" balls. Dip each Crawfish Pattie in egg and then dredge in flour.
Heat oil in a deep-fat fryer (or an electric skillet) to 375°.
Time for a seasoning taste test. Form one small portion (about 1" in diameter) and fry. When cool, taste to see if additional Cajun seasoning is needed.
Drop Crawfish Patties into oil and fry until golden brown. Drain on paper towels.
Note: This recipe will yield approximately 10-12 Crawfish Patties.
Serve with salad and a baked potato or french fries. A dipping sauce is optional.
