"Crawfish Stew"

5 Qt. Pot

  • Mix flour and oil together in a 5 qt. pot and make a dark-brown roux.

  • Add diced onions to roux and continue to stir until onions are translucent.

  • Add 1 cup of water to roux and mix thoroughly.

  • Continue to add water (a little at a time) until the desired consistency is achieved.

  • Reduce heat to medium-low and add bell pepper. Simmer for 15 minutes.

  • Add salt, Cajun seasoning, green onions and parsley. Mix and cook for 15 minutes.

  • Add crawfish and cook for no longer than 15 minutes.

    Note: If the Crawfish Stew is too thick, simply add a little water to achieve the desired consistency.

  • Add Cajun seasoning to taste, if needed.

  • Serve the Crawfish Stew over cooked rice. Serves 6.
